Chia seed mango pudding

This delicious fresh, healthy 'puddinkje' contains only a few ingredients and is made in a few minutes. Make it in advance so it can set in the fridge for a while. Eat it for breakfast, snack or dessert.

TIP: Chia seeds are packed with omega 3 fatty acids, protein, calcium and iron.

You need this:

  • 1 ripe mango, peeled and pitted
  • 3 tbsp chia seeds
  • 1/2 lime (with peel, well washed)
  • 250ml water
  • Optional: coconut yogurt or oat yogurt as a base or topping.

​That's how you make it!

  1. Put mango, lime and water in blender and blend creamy smoothie.
  2. Mix the smoothie with the chia seeds and stir well (the seeds must be well distributed).
  3. Divide the mixture between nice glasses, and then put it in the fridge overnight or about 4 hours.
